Teacher Appreciation Cookies

My sons and I made cookies for their teachers and teachers’ aides. The cookies turned out so delicious that I wanted to share the recipe with you.

Oatmeal Chocolate Cranberry Cookie Bars

3/4 cup butter
3 cups flour
1 cup rolled oats
1 cup packed brown sugar
1/2 cup white sugar
1 egg
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 cup dried cranberries
1 cup chocolate chips

Cream butter in a large mixing bowl. Add about half the flour, plus the brown sugar, white sugar, egg, baking powder and baking soda. Beat thoroughly until combined. Add oats and mix. Add flour little by little until the dough holds together well- you might not need all the flour. Add the cranberries and chocolate chips. Refrain from tasting- raw egg is not good for you! If you do taste it, don’t let the kids see you…

Spread in a buttered rectangular baking dish and bake at 350°F until done, about 20 to 25 minutes. Let cool, then slice into rectangles. Sure to be appreciated by all!

Wow, I wish someone had made ME some teacher appreciation cookies! I’ll have to try the recipe sometime. I don’t see how you can go wrong with chocolate chips and cranberries.
The blog looks great. Congratulations! I really debated about whether or not to use WordPress and self-hosting, but decided I need to see how committed I am before I spend money to keep my blog going. I’ll be interested to see how you like WordPress as time goes on. I think the new name was a wise choice as well. Nowadays, you seem to hear about frugality everywhere. Hopefully the new name will send you more traffic. :-) Oh, and thank you for mentioning me in the France blog list.
