My favorite is a simple shrimp salad that I do with chopped salad size shrimp, green onions, a little mayo and mustard, salt and pepper. It's yummy. I just found a chicken salad recipe in Better Homes and Gardens that I want to try as well.

(only in the last two weeks have I really been "in" to making my own salads at least once a day... this is due to the great spinach and lettuce in my garden! And the cute pot of herbs helps to flavor the dressings nicely.
I LOVE a great spinach salad... To the greens, I add wilted mushrooms, crumbled bacon, hardboiled egg, and sometimes some cheese and red onion. The dressing, if you're dining right away, is really great warmed up... 1/2 c. oil, 2 Tbsp. red wine vinegar, 2 Tbsp. sour cream, 3/4 tsp. salt, 1/2 tsp. dry mustard, 1 Tbsp. sugar, 2 tsp. fresh parsley, 1 clove garlic, freshly ground pepper. This is fabulous!
We love caesar too... if it's the main course, I chop and fry some chicken breasts to toss in.

It was so good! I have tried duplicating how my host family made it, but I have yet to get it right. I will try what you suggested and see how that turns out.
Here in the States I also love Cobb salad. Fried chicken salad is really good too, just not good for you. :)
I like pasta salad too - for mine I just use rotini noodles, feta cheese, red onions, carrots, lightly cooked broccoli, and balsamic dressing. I toss the cheese in last, right before it's served (cold).

Our lettuce is getting really big, I think we'll have salads tonight too, with homegrown lettuce, spinach, greenbeans, and tomato. :)
