Veggie Mash

Ever get tired of mashed potatoes? No, me neither. But here’s an idea for another mashed side dish, that’s just as delicious. Leftovers can be used in the same way as mashed potatoes, in fish cakes or to thicken soups.

Use equal quantities broccoli and celery root (celeriac). I use the frozen variety, which is easily available in France, although I’m not sure about in the United States or other countries. Cut into small pieces and then boil or steam until tender. Mash or puree, then season with butter, salt and pepper. Yum!
