Erika sent me this recipe, which she says is great for potlucks and holidays. (I make a stove top version of this which isn’t as pretty as hers sounds.) This is also a fairly common dish here, but the French don’t marinate it overnight.
Erika says: Best potluck recipe I have, also works well for holiday dinners, is to take green bean rolls.
- 1 pack of bacon
- 1 bottle of french dressing,
- 2 or 3 cans of uncut green beans
Slice the bacon in 1/2 , take around 5 green beans, roll them up in your 1/2 slice of bacon, place in a baking pan, end of the bacon down so they don’t unroll. When you have rolled all the green beans and bacon, pour your french dressing over all of it, let it marinate in the fridge over night and the next day bake it in the oven at 375* for 30-45 min, depends on how done you like your bacon.
It’s easy, tasty, and impressive. Its also something the kids can do while watching TV if you set it up right. (Turkey bacon and low-fat dressing also work well with this).
