Spinach Onion Dip

This is a sure party pleaser, and I like that my kids will eat it as well, getting a healthy dose of spinach in the process of dipping their chips. I also serve it with sliced red peppers and carrot and celery sticks. Best of all, it’s easy, can be prepared in advance, doesn’t cost much and any leftovers can be thinned with a bit of milk and used as a sauce for baked chicken breasts.

  • 1 4oz tub sour cream
  • 4ozs frozen spinach, thawed and well drained!!
  • 2 packages French onion soup mix (in France they just call it onion soup!)

Mix together. Check that it’s mixed together with a few chips. For testing purposes only, you see.

YUM! This is my kids’ favorite way to eat spinach. I dice water chestnuts and add them to the dip as well.
