Chocolate cake in a mug recipes withstanding, when I need to make a cake I have one go-to recipe. It’s called the Busy-Day cake, from my beloved and battered copy of the Better Homes New Cookbook. Why do I love this recipe? Because it is very easy to make, forgiving of less than accurate measurements, uses everyday ingredients that I almost always have on hand and can be adapted to any flavor.
Different flavors I’ve made recently include chocolate, with a bit of added cocoa powder, upside down pineapple cake with brown sugar, banofee-toffee with chocolate chips, bananas and caramel sauce, apple cake with grated apples, and carrot cake with grated carrots. Anything is possible!
Busy-Day Cake
- 1 1/3 cups all purpose flour
- 2/3 cup sugar
- 2 teaspoons baking powder
- 2/3 cup milk
- 1/4 cup melted butter or vegetable oil
- 1 egg
Mix all ingredients together. Bake in a 350° oven for 25-30 minutes, or until done. And yum.

Here in too hot Australia it’s too hot to think, let alone bake, but your Busy cake is so quick to make and bake I had it made in no time.
I added poppy seeds to the mix, will serve it with coconut ice cream and baked peaches, then expect loud applause – or else. 😉

That is a very good recipe. I actually added a little bit of ginger (powdered) (which is good for the digestive) and it came out tasting delicious!
