Cheesy Cod Fillets

This recipe was adapted from a recipe I found in a tattered copy of Family Circle. I replaced the flounder with cod, because I like cod better than flounder. It also recommends serving with tomato couscous, but while I’m a big fan of couscous, I can’t stand the tomato variety. So I make it with buttered noodles or rice. Everything goes with rice. I’ve also increased the amount of cheddar cheese, because, let’s face it, you can never use enough cheddar cheese in a recipe.

  • 1/3 cup mayonnaise
  • 1/2 cup grated cheddar cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 4 cod fillets

Mix together the first four ingredients. Preheat the oven to 400°. Place the fish in a baking dish and cover each fillet with the cheese mixture. Bake for 20 minutes or until the fish flakes easily. Serve with brocolli or a spinach salad tossed with toasted pine nuts.

Oh, and favourite seafood? Anything really, I love fish! Good tuna (fresh, not the tinned variety) is totally yummy and any shellfish is good, too. Or mackerels, very nice and cheap.
