Easy to pack for my husband's lunch too. I make my own stock and clean out my veggie drawer at least once a month. Sometimes I'll add leftover pasta or rice too. My favorite "secret" ingredients are coconut cream and/or Parmesan cheese rinds. A tablespoon or two of coconut cream adds a lot of nutrition and a very subtle flavor. Parmesan cheese rinds add great flavor (you'll need less salt) and creaminess. Be sure to fish them out before you serve it!

Tonight we're having Winter Sausage Soup -- chicken broth, carrot, onion, potato, spinach, smoked sausage served w/homemade croutons. It's sub-zero here today so it will be the perfect way to warm up tonight.

I'm a fan of all soups.
