Sliced vegetables with hummus or baba ganouj (both are easy to make), guacamole, etc. Throw in a few hearty crackers and a piece of fruit.

Mexican shrimp cocktail: mix a jar of salsa with chopped fresh cilantro, avocado chunks, thawed precooked shrimp. Serve with homemade baked tortilla or pita chips.

A raw sweet potato is great to keep at work. They're filling, tasty, microwaveable, and they keep indefinitely.

Use a piece of iceberg lettuce as a "tortilla" and fill it with curried tuna salad, egg salad, etc.

Stews, homemade soups. Take a serving of leftovers and have a fresh salad and a piece of fruit with it.

I'm at home but I do make hubby's lunch everyday. He is a sandwich guy but every once in a while to switch it up, I create a "salad kit" for him. I put the lettuce in a good tupperware container and separately wrap the fixins: usually 2 hard boiled eggs sliced in half, shredded carrots, black olives it we have them, and a bit of shredded cheese. The cheese and carrots are put right on top of the lettuce and anything else is wrapped separately and put in the bag. If we wants dressing(sometimes he goes without) I pour a bit on the bottom of the tupperware and then place the lettuce on top. It prevents the lettuce from wilting before he eats it. Another thing I do is place his regular sandwich spread inside of a rolled up tortilla. Its the same sammie but served a different way to break up the monotony.

I recommend granola. Make your own granola once a week to take with you. It's loaded with whole grain oats, nuts and dried fruit. Carbs + protein + sugar!!! If you like yoghurt you could take a little container of yoghurt and mix them together to eat. Then you are getting a serving of dairy too!

My other ideas are carrot and celery sticks. Peel and wash and chop once a week for all your lunches. Eat em plain!

Oh and cheese and crackers. I love whole grain crackers and cheddar cheese.
