Everything But The Stone Soup

I’m a big fan of soup. Whether it’s for warming up on a cold winter night, a sneaky way to get some veggies into my kids (or husband), a quick fix to the problem of ‘what’s-for-dinner’ or a frugal meal plan, soup is a great choice in many ways.

One of my favorite soups starts out as nothing at all really, just a desire or need for soup. I’m sure you’ve all heard the story of stone soup, with the peddlar who comes along with a magic stone to make soup. “This would be so much tastier” he says, “with a carrot. Of course we don’t need a carrot, but if you had a carrot…” and the housewife produces a carrot.

On and on the story goes, until the end result is a fragrant concoction that bears little to no resemblance to a stone.

I like to take a carrot or two, an onion, a can of chopped tomatoes. Then I might throw in some leftovers, or a hamburger patty. Sometimes some dried wheat, other times some chopped potato.

The point is, that there are things in life that don’t need a plan, and cooking is one of them. Add a little of this, and a little of that. Sometimes it turns out better than others, but at the very least it’s soup. And soup is good!

I’m a fan of all soups. I try to include 1 or 2 homemade soups a week on my menu. Tonight we’re having Winter Sausage Soup — chicken broth, carrot, onion, potato, spinach, smoked sausage served w/homemade croutons. It’s sub-zero here today so it will be the perfect way to warm up tonight.

Yay soups! Especially in winter. I make up a huge batch and freeze it in 8 oz portions. Easy to pack for my husband’s lunch too. I make my own stock and clean out my veggie drawer at least once a month. Sometimes I’ll add leftover pasta or rice too. My favorite “secret” ingredients are coconut cream and/or Parmesan cheese rinds. A tablespoon or two of coconut cream adds a lot of nutrition and a very subtle flavor. Parmesan cheese rinds add great flavor (you’ll need less salt) and creaminess. Be sure to fish them out before you serve it!

Gotta love sausage and kale! It can be pretty low cal if you use low fat turkey sausage and kale is a nutrition powerhouse!

I’m a BIG soup fan, too. I love lentil soup. I add some sliced chorizo in towards the end – gives a lovely kick.
